  • 1 large sweet potato peeled and grated
  • 1/2 cup almond flour
  • 1 egg
  • 1 tbsp coconut oil
  • 2 tbsp honey


  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the grated sweet potato, almond flour, egg, coconut oil, and honey. Mix well until a dough forms.

  • 2 chicken breasts skinless and boneless
  • 1/2 cup brown rice
  • 1 large sweet potato
  • 1/2 cup blueberries
  • 1/3 cup peas


  • To prepare the sweet potato, poke with a fork several times and place into a microwave. Cook for ~7 minutes. To check if it is done, stick your fork into the sweet potato. If it comes out clean, the potato is ready. If not, cook longer.
  • To prepare the brown rice, add 1 cup of water to your 1/2 cup of rice to a medium saucepan, bring the water to a boil, then cover and reduce to simmer for ~30 minutes until the rice is tender and absorbed the water.
  • To prepare the chicken breasts, bake for 400F (205C) for ~20 minutes.
  • Dice up or shred the chicken breasts in a bowl. Add the sweet potato puree without the skin ( you can spoon it out) as well as the rice. Lastly, add the blueberries and peas, mix well, and serve!
